Roasted chickpeas and zucchini potato salad

A delicious summer salad that tastes so fresh due to the addition of dill! Makes a wonderful side dish.

Ingredients (serves 4-6)
- 4 large potatoes, boiled skin on and cut into cubes
- 1 cup chickpeas, boiled and drained
- 1 zucchini, halved lengthwise then cut into half-moon slices
- 1 garlic clove, mashed
- extra virgin olive oil
- 1 Tablespoon balsamic vinegar, or more - to taste
- 1 teaspoon garlic powder
- sea salt and pepper
- a handful fresh dill, finely chopped/ 1 Tablespoon dry dill

Place the chickpeas in a kitchen towel and dry them very well. In a bowl, combine 2 tablespoons evoo with garlic powder, salt and pepper then add the chickpeas and toss to combine well. Line a baking sheet with parchment paper and place the chickpeas in a single layer and bake at 400 F (200 C) for about 30 minutes or until crispy, stirring the chickpeas every 10 minutes or so. Put the zucchini slices in the same bowl you used for the chickpeas and drizzle with some evoo, toss gently to combine, then place zucchini in a baking sheet and roast together with the chickpeas, stirring once or twice during cooking time. In a bowl, combine the potatoes with the zucchini, chickpeas and garlic, add the dill and season with salt, pepper, balsamic vinegar and some evoo, to taste. Enjoy!

Salata de cartofi cu dovlecei si boabe de naut coapte

Ingrediente (4-6 portii)
- 4 cartofi mari, fierti in coaja si taiati cubulete
- 1 cana boabe de naut, fierte si scurse
- 1 dovlecel (zucchini sau alt soi), taiat in doua pe verticala dupa care tait feliute
- 1 catel usturoi, zdrobit
- ulei de masline extra virgin
- 1 lingura otet balsamic, sau mai mult, dupa gust
- 1 lingurita praf de usturoi
- sare si piper, dupa gust
- o mana marar proaspat, tocat fin sau 1 lingura marar uscat

Puneti boabele de naut intr-un prosop de bucatarie si uscati-le bine. Intr-un bol, amestecati 2 linguri de ulei de masline cu praful de usturoi, sare si piper apoi dati boabele de naut prin acest amestec. Tapetati o tava cu hartie de copt si aranjati nautul intr-un singur strat si dati la cuptorul incalzit la 400 F (200C) timp de 30 de minute sau pana cand acestea sunt crocante, amestecand boabele cam din 10 in 10 minute, pentru a se coace uniform. Puneti feliile de dovlecel in bolul pe care l-ati folosit pentru naut si stropiti-le cu ulei de masline apoi puneti dovlecelul intr-o tava si dati-l la cuptor, impreuna cu boabele de naut, amestecand o data sau de doua ori. Intr-un bol, amestecati cartofii cu dovlecelul, nautul, usturoiul si mararul si asezonati cu sare, piper, otet balsamic si ulei de masline. Pofta buna!
