Tropical muffins


 I love to bake muffins: they're fast to prepare, don't take long in the oven and the kids love them! And you can always make them using wholesome ingredients such as fruit, nuts, seeds etc. This recipe is as tropical as it gets thanks to the use of pineapple, mango, banana and coconut! I hope you enjoy!

Ingredients (makes ~ 16 muffins)
- 2 cups flour
- 1/2 cup oatmeal
- 3/4 cup brown sugar
1/2 cup shredded coconut
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- a pinch of sea salt
- 1 cup mango purée (peel a mango, put it in a blender and pulse until you reach a purée consistency, some chunks are ok, then measure out 1 cup for the recipe)
- 1/2 cup pineapple, cut into small bits
- 1 banana
- 1/2 cup coconut milk
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract

Preheat the oven at 400 F (200 C) and prepare muffin tins by lining them with baking paper or spraying them with cooking oil. In a large bowl, mix the flour, oatmeal, brown sugar, shredded coconut, baking soda, baking powder and salt. In a separate bowl, mash the banana with a fork, add the mango puree, coconut milk, melted coconut oil, vanilla extract and stir to combine. Add the wet ingredients to the dry ones then gently fold in the pineapple pieces. Pour the batter into the muffin tins and bake for 15-20 minutes or until a toothpick inserted into the center comes out clean. Enjoy!

Briose tropicale

Ingrediente (aprox. 16 briose):
- 2 cani faina
- 1/2 cana fulgi de ovaz
- 1/2 cana fulgi de cocos
- 3/4 cana zahar brun
- 2 lingurite bicarbonat de sodiu
- 1 lingurita praf de copt
- un varf de cutit de sare
- 1 cana piure de mango (decojiti un mango si dati-l prin blender pana obtineti o textura destul de cremoasa, apoi masurati o cana de piure pe care o veti folosi la briose)
- 1/2 cana ananas, taiat bucatele marunte
- 1 banana
- 1/2 cana lapte de cocos
- 1/4 cana ulei de cocos topit
- 1 lingurita esenta de vanilie

Preincalziti cuptorul la 400 F (200 C) si pregatiti formele de briose tapetandu-le cu hartie de copt sau ungandu-le cu ulei. Intr-un bol mare, amestecati faina cu fulgii de ovaz, fulgii de cocos, zaharul brun, bicarbonatul, praful de copt si sarea. Intr-un bol mijlociu, zdrobiti banana cu o furculita, adaugati piureul de mango, laptele de cocos, uleiul de cocos topit si esenta de vanilie. Incorporati ingredientele lichide in cele uscate si apoi adaugati cu grija bucatile de ananas. Turnati aluatul in formele de briose si dati la cuptor timp de 15- 20 de minute sau pana cand o scobitoare introdusa in centrul briosei iese uscata. Pofta buna!
