Broccoli and toasted walnut pesto


      - 1 broccoli head
      - 1 handful walnuts
      - 3 garlic cloves
      - 1 teaspoon freshly squeezed lemon juice
      - 1 Tablespoon nutritional yeast/ grated parmesan cheese (for a non-vegan option)
      - 1 handful fresh basil/ 1 Tablespoon dried basil
     - extra virgin olive oil
      - sea salt


    Cut the broccoli into small florets, keep the stem to use in your next soup :) . Steam the broccoli for about 4 minutes then quickly rinse under cold water. Meanwhile lightly toast the walnuts. In a food processor add the toasted walnuts, broccoli, mashed garlic, salt and pulse a few times then, with the processor running, slowly add the lemon juice and enough olive oil to reach a creamy consistency. Taste, adjust seasonings, add the nutritional yeast/ grated parmesan and pulse a few times more. Serve with your favourite pasta or in any other recipes requiring pesto.
