Dark chocolate bark with dried fruit and nuts

          




   This is a very flexible recipe that allows you to mix your favorite type of chocolate with the dried fruit and nuts of your choice. I used semi-sweet dark chocolate chips, almonds, walnuts and raisins this time but anything goes: milk chocolate, white chocolate (or a combination of both), dried apricots, cherries or blueberries and, as far as nuts are concerned, hazelnuts, macadamia and almonds are on top of my list. The quantities, again, depend on how much chocolate you want to make, I used about 2 cups of chocolate chips and now we have plenty of chocolate sitting around. But I'm not worried, it won't be here for long! :)



    Ingredients:

    - 1 cup chocolate chips
    - 1 handful nuts of your choice
    - 1 handful dried fruit
    - 1 teaspoon sea salt





           Prepare a baking sheet by spraying it with cooking oil then lining it with parchment paper. Start by lightly toasting your favorite nuts, either in the oven or in a pan, then coarsely chop them.  In a double boiler, melt the chocolate chips, stirring occasionally. When melted add the sea salt then pour it onto the baking sheet, smooth it out with the back of the spoon or a spatula then quickly add the toasted nuts and dried fruit. Place baking sheet in the fridge to set, for about an hour. When firm, break it into large pieces and store it in an airtight container.
