Strawberry-pineapple smoothie


     This is a simple, refreshing smoothie that makes me dream of summer and how perfect it is to sip it by the pool while reading a good book.


     - 1 cup strawberries, cubed

     - 1 cup pineapple chunks, frozen
     - 1 cup coconut water
     -  2-3 Tablespoons honey if needed

       Place the frozen pineapple chunks in the blender and add half of the coconut water, pulse until puréed, adding more coconut water, as needed. Add the strawberries and pulse again until smooth. Taste and if not sweet enough, add some honey and pulse. The quantities are just guidelines, the smoothie should please your own taste buds, so if you'd like the strawberry flavor to be more pronounced - just add more strawberries. There are no rules, at least not as far as I'm concerned. :) And if coconut water is not available, don't let that stop you from making the smoothie, just replace it with orange juice. Simple as that! A little tip: serve it as soon as it is ready as the coconut water has a tendency to separate in just a few minutes. If that happens, just give it another whirl in the blender.

      Smoothies are perfect for breakfast, with a croissant or a muffin or as an afternoon snack - energizing and delicious!
