Cream of zucchini soup

A very easy to make soup that will warm your heart and soul. Serve with garlic croutons or with your favorite bread.

Ingredients (serves 4-6)
- 1 large onion, minced
- 1 large carrot, sliced
- 1 large potato, diced
- 6 medium size zucchini, sliced
- 2 garlic cloves, minced
- 2 Tablespoons savory
- 1 teaspoon cayenne
- 1/2 teaspoon turmeric
- 3 Tablespoons extra virgin olive oil
- salt and pepper, to taste

Heat the olive oil and sauté the onions with the garlic until translucent, add the carrots, potatoes and zucchini and cook for about 4 minutes longer then add enough water (or vegetable broth) to cover the veggies. Add the spices, salt and pepper and allow to simmer until all veggies are tender. Remove from heat and, using a blender, purée the soup to a creamy consistency. Taste and adjust seasoning to your preference. Serve with garlic croutons and enjoy!
