Mango, avocado and beet salad with orange-maple dressing

This is a sweet salad that works great as an appetizer. Prepare it ahead of time on individual plates and drizzle the dressing just before serving.

Ingredients (serves 4 as an appetizer)
- 1 mango, sliced
- 1 avocado, diced
- 2 small beets, boiled and diced
- 1/2 red onion, sliced
- 2 Tablespoons toasted sesame seeds
- a few coriander sprigs, chopped (or 1 teaspoon dry coriander)
- 3 Tablespoons freshly squeezed orange juice
- 1 Tablespoon maple syrup/honey
- 2 Tablespoons extra virgin olive oil
- salt and pepper, to taste

Prepare the dressing by combining the orange juice with the maple syrup and olive oil. On a serving platter, arrange the mango, avocado and beet slices, sprinkle with salt, pepper, the sesame seeds, coriander and drizzle with the orange-maple dressing. Enjoy!
