Quinoa and fava bean salad


This quinoa salad is packed with middle-eastern flavors and works great as a meal on its own or as a side dish. 

Ingredients (serves 4-6)
- 1 cup quinoa, boiled according to instructions on the packaging
- 1 1/2 cups boiled fava beans, drained
- 1 tomato, diced
- 1 small red onion, minced then rubbed with 1 teaspoon Aleppo pepper
- 1-2 garlic cloves, mashed
- 1 lemon, juiced
- 3 Tablespoons extra virgin olive oil
- 1 teaspoon sumac
- a handful fresh parsley, chopped
- a few mint sprigs, leaves chopped

Place the quinoa into the serving bowl, fluff with fork and allow to cool to room temperature then add the fava beans, tomato, onion, garlic, lemon juice, olive oil, sumac and herbs. Toss to combine then taste and adjust seasonings to your preference. Enjoy!
