Cabbage salad with toasted almonds
- 1/2 green cabbage, finely shredded
- 1 carrot, grated
- 2 garlic cloves, mashed
- a few parsley sprigs, finely chopped
- a handful almonds, toasted and roughly chopped
- 2 Tablespoon apple cider vinegar
- 1 Tablespoon balsamic vinegar
- 3-4 Tablespoons extra virgin olive oil
- 2-3 Tablespoons maple syrup/honey
- 2 teaspoons dry coriander
- salt and pepper
In a large bowl, combine the shredded cabbage, grated carrot and parsley. Add salt and pepper. Make a dressing from the mashed garlic, apple cider vinegar, balsamic vinegar, evoo, maple syrup/honey, add salt and pepper and the dry coriander. Add the toasted almonds to the salad, toss to combine and then pour the dressing and toss again. Taste and adjust seasonings. I like this salad quite sweet and acidic at the same time so, often, I add more maple syrup and balsamic vinegar. Enjoy your summer!
