Hearts of palm, mango and avocado salad
This salad is always a hit at a gathering, it's pretty much the first thing to disappear from the bowls. It's very simple to make and it goes great with veggie balls (recipe here) or with anything you cooked on the grill. The quantities below yield a large bowl (about 6-8 salad servings) so if you don't want to make that much just reduce the ingredients accordingly. And if you chop everything into small cubes you will have a salsa instead!
Ingredients
- 1 can hearts of palm, sliced
- 1 mango, diced
- 1 avocado, diced
- 5 radishes, diced
- 1/2 English cucumber/ 2 garden cucumbers, diced
- 1 red onion, minced
- 1 garlic clove, mashed
- 1 lime (its juice)
- 3 Tablespoons extra virgin olive oil
- 1-2 Tablespoons maple syrup (depending on how sweet the mango is)
- salt and pepper
- a few coriander sprigs, chopped/ 1 teaspoon dry coriander
In a bowl, place the first 7 ingredients then add the dressing you made by mixing the rest of the ingredients, adding the coriander at the end. Toss very gently and serve.
