Tomato and avocado salad
This salad is pure heaven, a combination of some of my favorite ingredients: avocado, onion, garlic, lemon... Have this salad any time of the day, even for breakfast, it is both hearty and light and filled with Mother Nature's love for us.
Ingredients (serves 2)
- 1 avocado, cut in half and pitted, then carefully sliced
- 2 tomatoes, sliced into rounds
- 1/2 red onion, thinly sliced
- olives
- 1 garlic clove, mashed
- 1/2 lemon (its juice)
- 3 Tablespoons extra virgin olive oil
- salt and pepper
On individual plates, arrange the tomato rounds, avocado and onion slices, olives, sprinkle with sea salt and pepper and pour the dressing you made from combining the mashed garlic with the lemon juice and evoo. Serve it with rustic bread to soak up the delicious juices!
