Peas and tranquility
This is a hearty, rustic dish that can be enjoyed on its own or as a side dish. It pairs well with potatoes or pasta!
Ingredients
- 2 cups green peas (fresh or frozen)
- 1 onion, minced
- 1 carrot, grated
- 1 cup coconut milk (or more)
- paprika
- dill (fresh or dry)
- salt and pepper
- vegetable oil ( I used canola)
- 2 Tablespoons flour (I used rye)
Heat 2 Tablespoons of oil and sauté the onions until golden, add the grated carrot and sauté a few minutes more, add 1 Tablespoon paprika and stir well. Add the green peas and about 3/4 cup water,1 cup coconut milk, salt, pepper,1 Tablespoon dill, cover and let simmer for 10 minutes. Prepare a sauce thickener by dissolving 2 Tablespoons of rye flour with some coconut milk. Add the thickener to the green peas, stir well to prevent lumps and let simmer, uncovered, until peas are cooked.
