Apple pancakes
My mom made these pancakes for the kids (all her kids that is, whatever the age) and they were a big hit!
Ingredients (serves 4-6)
- 2 large apples,
- 1 cup almond milk
- 1 cup flour
- 2 Tablespoons vegetable oil
- 1 Tablespoon sugar
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- a pinch of salt
Toppings:
- walnuts, toasted
- cinnamon
- honey/maple syrup
Peel and grate the apples, squeeze out their juice (drink it!) and reserve them. In a large bowl combine the flour with the sugar and salt, and gradually whisk in the milk, then add the oil and the spices. If the composition is too thick, thin it with more milk (or water), if too thin - add more flour. Add the grated apples and combine well then allow batter to rest 10-15 minutes. Heat a non stick pan and add a teaspoon of oil, then fry the pancakes until golden. To serve the pancakes, sprinkle them with cinnamon, toasted walnuts and a drizzle of honey/maple syrup. Enjoy!
