Peppers and tomato pasta sauce
This is a very simple pasta sauce, packed with flavor and texture, perfect for a weeknight meal.
Ingredients (serves 4-6)
- 1 onion, diced
- 3 different color peppers, diced
- 4 garlic cloves, smashed and minced
- 1 can 800 ml (28 fl oz) whole peeled tomatoes
- 1 Tablespoon oregano
- 2 Tablespoons canola oil
- extra virgin olive oil
- salt and pepper, to taste
Heat the canola oil and sauté the onions until translucent, add the peppers, sprinkle with salt and pepper, and cook until completely softened and some parts start to brown. At this point, add the garlic and the oregano and sauté until fragrant. Add the tomatoes and gently mash them in the pan using a wooden spoon. Season with salt and pepper and simmer for a few minutes, until sauce reaches desired consistency. Drizzle with a little bit of olive oil and serve with your favorite pasta. Enjoy!
