Roasted carrots with za'atar
A flavorful side dish that's easy to prepare and will make your home smell incredibly delicious! For this recipe I used rainbow carrots which, besides looking so pretty, add different flavors and textures to the dish but regular, orange carrots are perfectly fine!
Ingredients (serves 4-6)
- 12 small carrots
- 2 Tablespoons za'atar
- 2-3 Tablespoons extra virgin olive oil
- salt and pepper
Cut the carrots in half lengthwise, if they're big, cut them again so that the pieces will not be too thick. Place the carrots in a baking dish, drizzle with the olive oil and toss to coat well. Sprinkle the za'atar powder, salt and pepper and toss again. Roast the carrots at 375 F for 25 minutes or until a fork easily pierces through and the thin edges of the carrots start to brown. Please note that if using rainbow carrots, some colors will take longer to cook, so test all different colors with the fork to see if they're all tender. Enjoy the carrots and be sure to dip your bread into the cooking juices as they are simply divine!
