Smoked eggplant, roasted red pepper and pomegranate salad


Forever in love with eggplants and constantly looking for new ways to enjoy them, this little salad came about and brightened up my day! I hope it can do the same for you!


Ingredients (serves 4-6)
- 2 medium eggplants, charred and peeled (see method here)
- 2 roasted red peppers, diced
- 1 garlic clove, mashed
- a few mint leaves, finely chopped
- 2 Tablespoons freshly squeezed lemon juice
- 2 Tablespoons pomegranate molasses
- 3 Tablespoons extra virgin olive oil
- salt, to taste
- pomegranate arils, to garnish

Mash the eggplants using a wooden cleaver (or a chef's knife) then place in a bowl and add the olive oil, one tablespoon at a time, stirring well between each addition. Add the roasted red pepper, mashed garlic, chopped mint, salt, lemon juice and pomegranate molasses. Adjust seasonings to your taste and garnish with pomegranate arils and mint leaves. Serve with pita bread and joy!
