Summer corn salad


What to do when you have plenty of corn sitting around? Well, make a salad, of course! 


Ingredients (serves 4)
- 3 ears of corn, boiled or grilled, kernels cut off the cob
- 1/2 English cucumber, thinly sliced
- 3 radishes, thinly sliced
- 1 small red onion, thinly sliced
- 1 garlic clove, mashed
- a handful fresh mint leaves, chopped
- 1 teaspoon sumac (optional)
- 1/2 lemon, juiced (or more, to taste)
- 3 Tablespoons extra virgin olive oil

Combine all ingredients in a bowl and eat with joy!
