Asparagus and red pepper freekeh with miso dressing

The miso dressing used in this recipe gives this dish an Asian twist that perfectly compliments the asparagus and the red pepper.

Ingredients (4 servings)
- 1 cup freekeh, boiled according to instructions on the packaging
- 1 bunch asparagus, tough ends trimmed then cut into 4 cm pieces
- 1 red bell pepper, cut into strips
- 2 Tablespoons sesame oil
- toasted sesame seeds, to garnish

Miso dressing
- 4 Tablespoons white miso paste
- 2 Tablespoons maple syrup/honey
- 2 Tablespoons Tamari
- 2 Tablespoons sesame oil
- 2 1/2 Tablespoons rice vinegar
- 1 teaspoon grated ginger
- 1 garlic clove, mashed

Prepare the miso dressing by combining the miso paste with the rest of the ingredients, in the order described. Taste and adjust seasonings according to your preference.

Heat 2 Tablespoons sesame oil in a non stick pan and sauté the asparagus and red pepper strips, on medium heat, until softened.

On a plate, arrange a bed of freekeh, place a few asparagus pieces and red pepper strips, drizzle some miso dressing and sprinkle with toasted sesame seeds. Enjoy!

Freekeh cu sparanghel, ardei rosu si dressing miso

Ingrediente (4 portii)
- 1 cana freekeh, fiert conform instructiunilor de pe ambalaj
- 1 legatura sparanghel
- 1 ardei rosu, taiat fasii
- 2 linguri ulei de susan
- seminte de susan prajite

Dressing miso 
- 4 linguri pasta de miso alb
- 2 linguri sirop de artar sau miere
- 2 linguri sos Tamari
- 2 linguri ulei de susan
- 2 1/2 linguri otet de orez
- 1 lingurita ghimbir proaspat razalit fin
- 1 catel usturoi, zdrobit

Pentru a pregati dresingul miso, amestecati pasta de miso cu restul ingredientelor, in ordinea mentionata. Potriviti condimentele dupa gust.

Indepartati capetele atoase ale sparanghelului si apoi taiati-l in bucati de aproximativ 4 cm. Incingeti 2 linguri de ulei de susan intr-o tigaie non aderenta si caliti, la foc mediu, sparanghelul impreuna cu ardeiul. Pe o farfurie, puneti un strat de freekeh, cateva bucati de sparanghel si ardei, turnati putin dressing si presarati seminte de susan prajit. Pofta buna!
