Lentil and mushroom burgers

Veggie burgers - because it's summer!

Ingredients (makes 12 burgers)
- 2 cups boiled lentils, drained
- 250 g mushrooms, finely chopped
- 2 cups boiled diced potatoes
- 1 cup panko breadcrumbs
- 3 garlic cloves
- 1 teaspoon thyme, or more, to taste
- 1 teaspoon coriander, or more, to taste
- 1 teaspoon parsley, or more, to taste
- 2 Tablespoons extra virgin olive oil
- sea salt and pepper, to taste

Heat the oil in a non-stick pan, add the mushrooms and sprinkle with salt and pepper. Sauté mushrooms until liquid has evaporated. In a blender, pulse the lentils, potatoes, mushrooms, garlic and spices until almost completely mashed, with some chunky pieces remaining. Transfer mixture to a bowl, add the breadcrumbs and adjust seasonings. Using your hands, form the patties then fry them on the grill, griddle, in the pan or bake them in the oven at 375 F for about 25 minutes. Enjoy!

Chiftele de linte cu ciuperci

Ingrediente (20 chiftele mari)
- 2 cani de linte fiarta si scursa
- 250 ciuperci, tocate marunt
- 2 cani cartofi fierti, taiati cubulete
- 1 cana pesmet tip panko (sau alt pesmet)
- 3 catei usturoi
- 1 lingurita (sau mai mult) cimbru
- 1 lingurita (sau mai mult) coriandru
- 1 lingurita (sau mai mult) patrunjel 
- 2 linguri ulei de masline extra virgin
- sare si piper, dupa gust

Incingeti uleiul intr-o tigaie non-aderenta si caliti ciupercile presarate cu sare si piper, pana cand apa lasata de acestea s-a evaporat. Intr-un blender, mixati lintea, ciupercile, cartofii, usturoiul si condimentele pana cand obtineti o pasta cu cateva bucati ne-macinate. Transferati compozitia intr-un bol, adaugati pesmetul si ajustati condimentele dupa preferinta. Formati chiftelele si prajiti-le fie pe gratar, in tigaie sau la cuptor. Pofta buna!
