Pasta salad with tofu mayonnaise





 Tofu mayonnaise is smooth and creamy and so light! Use it any way you would regular mayo. I took a pasta salad recipe that I know from my husband and that is so loved by the kids, and made a vegan version of it. It did not disappoint, on the contrary. I took out the tuna and replaced it with avocado and roasted red pepper, and, of course, I used tofu mayonnaise instead of the regular kind.

Ingredients (serves 6-8)
- 2 cups dry small shape pasta such as macaroni, shells etc, boiled al dente according to instructions on the packaging, drained and rinsed under cold water and drained again thoroughly
- 1 cup fresh/frozen green peas boiled, drained well
- 1 cup fresh/frozen corn, boiled, drained well
- 1-2 roasted red pepper, diced
- 1 avocado, sliced - if you want to garnish the salad with it, or diced - if you want it mixed into the salad
- salt and pepper

Tofu mayonnaise
- 1 tub 350g silken tofu, drained well
- 1 Tablespoon Dijon mustard
- 3 Tablespoons extra virgin olive oil
- 2-3 Tablespoons apple cider vinegar
- 1 garlic clove
- salt and pepper, to taste

  To prepare the tofu mayonnaise, simply add all ingredients into a blender and mix until creamy, scraping down the sides as necessary and adjusting the seasonings according to taste.
  
  In a large bowl, combine the pasta with the rest of the veggies, season with salt and pepper and add a few tablespoons of the tofu mayonnaise, according to taste. You could always add a can of tuna, properly drained. Enjoy!

Salata de paste cu maioneza vegana de tofu

 Maioneza de tofu este foarte cremoasa si lejera si inlocuieste foarte bine maioneza traditionala in orice reteta. Pentru aceasta salata m-am inspirat dintr-o reteta pe care am invatat-o de la sotul meu, o reteta mult iubita de catre copii in special, si nu doar ai mei! Reteta originala este o salata de paste cu ton, eu am inlocuit tonul cu avocado si am adaugat cubulete de ardei rosu copt. Daca doriti, puteti adauga o conserva de ton, bine scursa.

Ingrediente (6-8 portii)
- 2 cani paste marunte uscate (macaroane, cochilii, etc) fierte al dente urmand instructiunile de pe ambalaj, scurse si trecute sub un jet de apa rece, dupa care lasate in strecuratoare pentru a se scurge complet
- 1 cana mazare proaspata sau congelata, fiarta si scursa bine
- 1 cana porumb proaspat sau congelat, fiert si scurs bine
- 1-2 ardei rosu copt, tait cubulete
- 1 avocado, taiat felii daca doriti sa decorati salata cu el sau taiat cubulete daca doriti sa il incorporati in salata
- sare si piper dupa gust

Maioneza vegana de tofu
- 1 cutie 350g de tofu tip 'silken', scurs bine
- 1 lingura mustar de Dijon
- 3 linguri ulei de masline extra virgin
- 2-3 linguri otet de mere
- 1 catel de usturoi
- sare si piper dupa gust

Pentru a prepara maioneza de tofu aveti nevoie de un blender sau de un robot de bucatarie. Puneti toate ingredientele in blender si mixati pana obtineti un amestec omogen, ajustand condimentele dupa gust. Resturile se pastreaza la frigider.

Intr-un bol mare, adaugati pastele, mazarea, porumbul, ardeiul rosu, sare, piper si cateva linguri de maioneza de tofu, dupa gust. Pofta buna!
