Potato salad with olives and smoked tofu

Potato salads make a great side dish and they go with practically everything. Take it to your next picnic, potluck or barbecue.

Ingredients ( serves 4-6)
- 5 large potatoes, boiled skin on in salted water, then diced
- 4 scallions, sliced
- a few slices smoked tofu, diced
- a handful kalamata olives
- 2 Tablespoons apple cider vinegar
- 3 Tablespoons extra virgin olive oil
- sea salt and freshly ground pepper, to taste

Combine all ingredients and enjoy the deliciousness!

Salata de cartofi cu masline si tofu afumat

Ingrediente (4-6 portii)
- 5 cartofi mari, fierti in coaja in apa cu sare si apoi taiati cubulete
- 4 cepe verzi, taite rondele
- cateva felii de tofu afumat, tait cubulete
- o mana masline kalamata
- 2 linguri otet de mere
- 3 linguri ulei de masline extra virgin
- sare de mare si piper proaspat macinat, dupa gust
