Chickpea and potato patties

Veggie patties are great in sandwiches, pita or tortilla wraps or with a salad. Top them with anything you like such as hummustofutziki, avocado, radishes, cucumbers, spinach etc, and you have a complete and satisfying meal.

Ingredients (makes about 20 small patties)
- 2 cups boiled chickpeas
- 2 cups boiled diced potatoes
- 2 garlic cloves
- 3/4 cup panko breadcrumbs
- 1 teaspoon cumin
- 1/2 teaspoon paprika, or more, to taste
- a few fresh parsley leaves, chopped/ 1 Tablespoon dry parsley

Place all ingredients in a blender and pulse until mashed, some chunky pieces are welcome. Taste and adjust seasonings. Using an ice cream scoop or your hands, form the patties and place them on an oiled baking sheet. Bake at 375 F for about 20 minutes or until desired level of crispiness is achieved. 

Chiftelute de cartofi cu naut

Ingrediente (aprox. 20 de chiftelute potrivite)
- 2 cani boabe de naut fiert
- 2 cani cubulete de cartof fiert
- 2 catei de usturoi
- 3/4 cana pesmet panko
- 1 lingurita chimion macinat
- 1/2 lingurita boia, sau mai mult, dupa gust
- cateva frunze de patrunjel tocat sau 1 lingura patrunjel uscat

Puneti toate ingredientele in blender si mixati pana ce acestea formeaza o pasta (cateva bucatele nemacinate sunt binevenite, adauga o textura interesanta chiftelutelor). Gustati si potriviti condimentele dupa preferinta. Cu ajutorul unei linguri de servit inghetata, sau pur si simplu cu mainile, formati chiftelutele si puneti-le pe o tava unsa cu ulei. Dati la cuptorul incins la 375 F (180 C) timp de aproximativ 20 de minute sau mai mult daca va plac mai uscate. Serviti-le cu o salata sau intr-un sandwich cu hummus, avocado, ridichi, castraveti sau/si spanac. Pofta buna!
