Red quinoa with Japanese-inspired salad

Having sushi in mind, I thought of creating something that felt similar but was fast and simple to make. So, here we have this light and delicious meal that is ready under 20 minutes.

Ingredients (serves 4)
- 1 cup red quinoa
- 1/2 daikon radish, cut into thin strips
- 1 carrot, cut into thin strips
- 1 English cucumber, cut into thin strips
- 1 nori sheet, cut into thin strips
- 3 Tablespoons sesame seeds, toasted
- 2 Tablespoons tamari sauce
- 1 Tablespoon rice vinegar
- 1 Tablespoon sesame oil
- 1 Tablespoon maple syrup/honey

Bring a saucepan of water to a rapid boil, add in the quinoa and boil for 11 minutes, drain and reserve. Prepare a dressing by combining  the tamari sauce with the rice vinegar, sesame oil, maple syrup and 1 tablespoon of the toasted sesame seeds. Add the cut veggies into a bowl and combine with the dressing. Top with the nori strips and extra sesame seeds. Enjoy!

Quinoa rosie cu salata de inspiratie japoneza
Aceasta reteta s-a nascut cu intentia de a crea ceva ce aduce a sushi dar e simplu si rapid de facut, la urma urmei, nivelul poftei poate depasi uneori nivelul rabdarii, nu? Deci iata o reteta care e gata in 20 de minute si care ne trimite cu gandul la Tara Soarelui Rasare. 

Ingrediente (4 portii)
- 1 cana quinoa rosie
- 1/2 ridiche daikon, taiata felii subtiri
- 1 morcov, taiat felii subtiri
- 1 castravete mare, taiat felii subtiri
- 1 foaie de nori, taita felii subtiri
- 3 linguri seminte de susan prajite
- 2 linguri tamari
- 1 lingura otet de orez
- 1 lingura ulei de susan
- 1 lingura sirop de artar sau de miere

Puneti o cratita cu apa la fiert. Cand apa clocoteste, adaugati quinoa si fierbeti timp de 11 minute dupa care scurgeti quinoa de apa. Pregatiti o vinegreta din tamari, otetul de orez, uleiul de susan, siropul de artar si 1 lingura de seminte de susan. Intr-un bol, puneti ridichea, castravetele si morcovul si amestecati-le bine cu vinegreta dupa care decorati cu fasiile de nori si cu semintele de susan ramase. Pofta buna!
