Apple muffins with brown sugar-walnut topping

   Apple muffins! A delightful little snack enjoyed by the entire family. In this recipe I combined the goodness of apples with that of the banana and the brown sugar, and added the nutritional benefits of oatmeal,coconut oil and coconut milk. The walnut topping is optional but strongly recommended!

Ingredients (makes ~ 16 muffins)
Dry ingredients:
- 1 1/2 cups flour
- 1 1/2 cups rolled oats
- 1 Tablespoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- a pinch of sea salt
Wet ingredients:
- 1 banana 
3/4 - 1 cup brown sugar ( depending on how sweet the apples and banana are)
- 1 cup coconut milk
- 1/4 cup coconut oil, melted
- 2 apples, grated just before adding to the composition
Topping (optional):
- a few walnuts, coarsely chopped and sprinkled with brown sugar

  Line the muffin tins with baking paper or spray them with cooking oil and preheat the oven at 350F. In a large bowl, mix the flour, oats, baking soda, cinnamon, nutmeg and sea salt. In a separate bowl, mash banana with a fork, add brown sugar and mix well, then add in coconut milk and oil. Add wet ingredients to the dry ones and combine. Fold in the grated apples. Fill the muffin tins with the composition and add the topping, if using. Bake 18-20 minutes at 350 F, or until toothpick inserted in the centre comes out clean. Remove muffins from the tins and let cool completely on a cooling rack. Enjoy!

Briose de mere si crusta the nuca cu zahar brun

Ingrediente (aprox. 16 briose):
- 1 1/2 cani faina
- 1 1/2 cani fulgi de ovaz
- 1 lingurita bicarbonat de sodiu
- 1 lingurita scortisoara
- 1 lingurita nucsoara
- un varf de cutit de sare de mare
- 1 banana
- 3/4 - 1 cana zahar brun ( in functie de cat de dulci sunt banana si merele)
- 1 cana lapte de cocos
- 1/4 cana ulei de cocos, topit
- 2 mere, razalite doar inainte de a fi adaugate in compozitie
- cateva nuci, tocate si presarate cu zahar brun

  Pregatiti formele de briose tapetandu-le cu hartie de copt sau ungandu-le cu ulei si preincalziti cuptorul la 350 F (180 C). Intr-un bol mare, amestecati faina cu fulgii de ovaz, bicarbonatul, scortisoara, nucsoara si sarea de mare. Intr-un bol mai mic, zdrobiti banana cu o furculita si amestecati bine cu zaharul brun apoi adaugati laptele de cocos si uleiul de cocos topit. Amestecati ingredientele lichide cu cele uscate si adaugati merele razalite. Turnati aluatul in formele de briose si adaugati, pe fiecare briosa in parte, cateva bucatele de nuca presarata cu zahar brun. Dati la cuptor timp de 18-20 de minute sau pana cand o scobitoare introdusa in centrul briosei iese uscata. Lasati briosele sa se raceasca complet (daca puteti rezista!) pe un grilaj de racire. Pofta buna!
