Sweet potato fries with parsley-lime salsa





   Sweet potato fries - a simple and delicious side dish for the entire family! Serve them with salsa verde or with tofutziki, either way they're sure to disappear fast from the plate!

Ingredients (serves 4 as a side dish)

For the sweet potato fries:
- 2 large sweet potatoes, peeled, washed and dried completely, then cut into strips
- 2-3 Tablespoons extra virgin olive oil
- 1 teaspoon smoked/sweet paprika
- 1 teaspoon garlic powder
- freshly ground black pepper
- sea salt

For the parsley-lime salsa:
- 2 cups fresh parsley leaves
- 2 garlic cloves
- 1 teaspoon capers
- 1 1/2 limes, juiced
- 6 Tablespoons extra virgin olive oil
- sea salt and pepper

   Line a baking sheet with parchment paper. In a large bowl, combine the evoo with the paprika, garlic powder and pepper then add the sweet potatoes and toss to coat. Arrange the potatoes in a single layer on the baking sheet and bake at 450 F for 20 minutes or more, until they are crispy, turning once during cooking time. Transfer to serving dish and sprinkle with sea salt. 
   Meanwhile prepare the parsley-lime salsa either using a blender/food processor or by hand. If using a blender, simply toss all the ingredients in and pulse until combined. If you prepare the salsa by hand, finely chop the parsley and capers and combine with the rest of the ingredients.
   
Cartofi dulci prajiti cu salsa de patrunjel si lima

Ingrediente (4 portii)
- 2 cartofi dulci mari, curatati de coaja, spalati si uscati complet, taiati felii
- 2-3 linguri ulei de masline extra virgin
- 1 lingurita boia afumata/dulce/iute
- 1 lingurita praf de usturoi
- piper negru proaspat macinat
- sare de mare

Pentru salsa de patrunjel si lima:
- 2 cani frunze de patrunjel
- 2 catei de usturoi
- 1 lingurita capere
- zeama de la 1 1/2 lime
- 6 linguri ulei de masline extra virgin
- sare si piper

  Intr-un bol mare, amestecati uleiul de masline cu boia, praf de usturoi si piper, adaugati feliile de cartofi dulci si, cu o lingura de lemn, treceti bine cartofii prin amestec. Pe o tava tapetata cu hartie de copt, aranjati cartofii intr-un singur strat, si dati la cuptorul incalzit la 450 F (230 C) timp de 20 de minute sau pana cand devin crocanti, intorcandu-i o singura data. Aranjati cartofii pe un platou si adaugati un praf de sare de mare.
  In timp ce cartofii sunt la cuptor, pregatiti salsa fie adaugand toate ingredientele intr-un blender si mixand cateva secunde pana ce s-au omogenizat, fie tocand fin patrunjelul si caperele si amestecandu-le, intr-un bol, cu restul ingredientelor.
