Asparagus, avocado and toasted walnut pesto

   Pesto! So lovely, summer-y, flavorful and fresh! This particular version is my absolute favorite, it is the most delicate and smooth creation that combines a very powerful trio: avocado, asparagus and walnut.

Ingredients (serves 4)
- small bunch asparagus (about 8 spears, medium size)
- 1/2 avocado
- 1/3 cup walnuts, toasted
- 1 Tablespoon nutritional yeast
- 2 Tablespoons lemon juice, freshly squeezed
- 6 Tablespoons extra virgin olive oil
- a handful fresh basil leaves
- Himalayan/sea salt and freshly ground black pepper, to taste

   Trim asparagus by snapping off tough ends then steam it for about 4-5 minutes or until a fork pierces through. In a blender/food processor, add asparagus and the rest of the ingredients and blend until smooth. Adjust seasonings according to taste and serve immediately. Enjoy! 

Pesto de sparanghel, avocado si nuca prajita

Aceasta este varianta mea preferata de pesto, este foarte lejer, cremos si fin si contine ingrediente minunate, de la Mama Natura!

Ingrediente (4 portii)

- o legatura mica sparanghel (aprox. 8 tulpini de marime medie)
- 1/2 avocado
- 1/3 cana nuca, prajita
- 1 lingura drojdie nutritionala (inactiva)
- 2 linguri zeama de lamaie proaspata
- 6 linguri ulei de masline extra virgin
- o mana frunze de busuioc 
- sare de mare sau de Himalaia si piper proaspat macinat, dupa gust

Curatati sparanghelul de capetele fibroase si fierbeti-l la aburi timp de 4-5 minute sau pana cand o furculita patrunde usor tulpina. Puneti sparanghelul impreuna cu restul ingredientelor intr-un blender si mixati pana obtineti o textura cremoasa. Se serveste imediat. Pofta buna!
