Fresh salad with dijon-maple dressing

 
     Ingredients (serves 1)

  •  a handful of mixed greens (arugula, baby spinach, romaine, chicory) 
  •  1 radish, thinly sliced (on the mandoline, if available)
  •  1 cucumber, thinly sliced (on the mandoline)
  •  1 pepper, thinly sliced
  •  a handful chickpeas

  For the dressing:

  • 1 heaping teaspoon Dijon mustard
  • 1 teaspoon maple syrup/honey for a non-vegan option
  • 3 Tablespoons balsamic vinegar
  • 3 Tablespoons extra virgin olive oil
  • 1 garlic clove, mashed
  •  sea salt and freshly ground pepper, to taste
  
   In a small bowl, add the dijon mustard, combine it with the maple syrup, then slowly whisk in the balsamic vinegar and the olive oil. Add the mashed garlic and season with salt and pepper to taste.  
   Place the mixed greens in the middle of the plate. Take 2 slices of cucumber and arrange them around the greens by slightly overlapping the edges and pressing gently to get them to stick together. Arrange the rest of the veggies on the plate and drizzle with some of the dressing. Enjoy!

Salata Fresh cu dresing de Dijon

      Ingrediente ( 1 portie)

      Pentru salata:

  • o mana de verdeturi diferite (spanac, cicoare, rucola, laptuca etc.)
  • o ridiche, feliata fin 
  • un castravete, feliat fin
  • un ardei, feliat
  • o mana de boabe de naut fiert
     Dressing:

  • o lingurita cu varf mustar de Dijon
  • o lingurita sirop de artar/ miere de albine
  • 3 linguri otet balsamic
  • 3 linguri ulei de masline extra virgin
  • 1 catel de usturoi, presat
  • sare de mare si piper proaspat macinat, dupa gust.
  Intr-un bol mic sau o cana, amestecati mustarul impreuna cu siropul de artar sau mierea, adaugati treptat otetul balsamic si uleiul de masline. Adaugati usturoiul, sarea si piperul.
  Aranjati verdeturile in mijlocul farfuriei, inconjurati-le cu 2 felii de castravete suprapunand capetele pe care le presati usor, pentru a se lipi. Decorati farfuria cu restul ingredientelor peste care presati putin dresing. Pofta buna!
