Cabbage, kale and carrot salad with sweet tahini dressing

   This is a wonderful salad, crunchy, sweet and savory at the same time. Add the dressing just before serving, to keep the bite of the veggies.

   Ingredients (serves 8)

- 1/4 white cabbage, shredded
- 1 small bunch kale, de-stemmed and finely shredded
- 2 carrots, grated
- 1/2 onion, thinly sliced
- 1/2 cup (or more) sesame seeds, toasted
- 1/2 cup tahini
- 1/2 lemon, its juice
- 1 Tablespoon maple syrup/honey
- 2 Tablespoons sesame oil/ extra virgin olive oil
- 1 teaspoon dry mint
- salt and pepper

In a large bowl, toss the shredded cabbage, kale, carrots and onion. Prepare the sweet tahini dressing by combining the tahini with the lemon juice, adding in the maple syrup (or the honey), the dry mint, salt and pepper and enough water to reach a creamy consistency. Add the sesame (or olive) oil. To plate the salad, add some of the cabbage-kale-carrot mixture, top it with toasted sesame seeds and drizzle with the sweet tahini dressing. Enjoy!
