Arabic rice (vegan)

   This is my take on arabic rice, a simple and delightful side dish that goes with practically everything. The turmeric gives it a beautiful yellow color (and amazing health benefits!) while the coconut oil makes it creamy while keeping it light.

Ingredients (serves 4-6)
- 1 cup long grain rice
- 1/4 cup vermicelli 
- 2 cups water
- 1 Tablespoon coconut oil
- 1/2 teaspoon turmeric
- sea salt and freshly ground black pepper

  Heat the coconut oil, add the vermicelli and fry, stirring constantly, until golden brown. Add the rice and the turmeric and fry for a minute or two. Add the water, salt and pepper and bring to a boil. Stir, cover, reduce heat to minimum and boil for 15 minutes or until water is absorbed. Remove from heat, stir once, cover and let sit for 5 minutes. Fluff with a fork and enjoy!

Fry the vermicelli until golden brown.

Bring to a boil, stir once, cover and reduce heat to minimum.
