Beans and peppers stew

 Very easy to make, this stew will warm your heart and fill your belly with joy! 


Ingredients (serves 4)
- 2 cups boiled white beans, drained
- 2 onions, diced
- 1 red bell pepper, cut into bite size pieces
- 1 green bell pepper, cut into bite size pieces
- 4 large fresh tomatoes, (or canned) cut into bite size pieces 
- 4 garlic cloves, smashed with the flat of the knife, then minced
- a handful fresh parsley, chopped
- 2 Tablespoons good quality vegetable oil
- salt and pepper, to taste

Heat the vegetable oil, add the onions, give them a good sprinkle of salt and pepper and sauté until translucent, then add the peppers and cook until softened. Add the tomatoes, season with salt and pepper, and let simmer until they fall apart (if using fresh tomatoes) and have a purée-like consistency. Add the boiled beans and the garlic and simmer for about 4-5 minutes, just to heat through. Remove from heat and add the fresh parsley. Taste and adjust seasonings. Serve with Ralurabic rice and enjoy!
