Kale pesto

A very easy to make pesto that tastes very fresh, bright and 'green'!

- 1 bunch kale, destemmed and coarsely chopped
- a few basil sprigs/ 1 teaspoon dry basil
- 1/2 cup almonds, toasted
- 2 garlic cloves (use only 1 if very pungent)
- 1/2 lemon, juiced
- 4 Tablespoons extra virgin olive oil, plus more
- 2 Tablespoons nutritional yeast
- salt and pepper, to taste

Combine ingredients in a blender and pulse until smooth, taste and adjust seasonings, then transfer to a bowl and add a drizzle of extra virgin olive oil. Serve it with your favorite pasta and enjoy!
