Marinated peppers salad


An easy to make salad that blends the delicate flavors of different color peppers. Use plenty of apple cider vinegar and allow the peppers to marinate for a couple of hours before serving. This little salad was a big success with my kids, I hope you enjoy it too!


Ingredients (serves 4-6)
- 1 red bell pepper, thinly sliced
- 1 orange bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 small red onion, thinly sliced
- 1 garlic clove, mashed
- a few parsley sprigs, chopped
- 3-4 Tablespoons apple cider vinegar
- 3 Tablespoons extra virgin olive oil

Combine ingredients in a bowl, taste and adjust seasonings. Let sit for at least an hour before serving, the longer the peppers sit, the softer they become. Enjoy!
