Edamame and avocado dip

Dips are always fun, easy to prepare and a nice way to bring both color and nutrition to the table. 

- 600 g frozen edamame, boiled then shelled
- 1/2 avocado
- 2 garlic cloves, mashed
- a handful cilantro/ 1 teaspoon ground coriander seeds
- 1/2 lime, juiced, or more, to taste
- 2 Tablespoons toasted sesame oil
- sea salt
- a pinch cayenne
- 2 Tablespoons sesame seeds, toasted

Place all ingredients except for the sesame seeds in a blender and pulse until smooth. Taste and adjust seasonings. Place dip in a bowl, fold in 1 Tablespoon of the toasted sesame seeds and garnish with remaining seeds. Serve with crudités, pita chips or crackers.
