Corn and avocado salsa

Fresh and colorful, salsa is a party of flavors that joyfully dance together, playing upon each other's uniqueness only to blend in harmony.

- 1 ear of corn, boiled or grilled
- 2 tomatoes, diced
- 1 avocado, diced
- 1 small red onion, minced
- 1 garlic clove, mashed
- a few cilantro sprigs, chopped
- 1 lime, juiced
- 2 Tablespoons extra virgin olive oil
- salt and pepper, to taste

Cut the kernels off the ear of corn then gently combine with the rest of the ingredients. Serve immediately and enjoy!
