Oven roasted vegetable medley

An amazingly flavorful dish that is super easy to prepare: just prep the veggies and pop them in the oven, then sit back and do your best to be patient while the tantalizing aromas flood your home...

Ingredients (serves 4-6)
- 1 large eggplant, diced
- 1 zucchini, cut in half lengthwise then sliced
- 3 peppers (different colors), cut into bite size pieces
- 2-3 large tomatoes, diced
- 1 onion, sliced
- 4 garlic cloves, thinly sliced
- 1 cup chickpeas, boiled and drained
- 1 Tablespoon oregano
- 1 teaspoon basil
- 4 Tablespoons extra virgin olive oil
- sea salt and pepper, to taste

Place the veggies in an oven proof dish, sprinkle with salt, pepper, oregano and basil and drizzle the olive oil. Toss to combine well, then bake at 400F for 30-45 minutes or until veggies have cooked, stirring a few times during the cooking time. Serve with bread or Ralurabic rice, and olives or pickles.
