Asparagus and freekeh salad





        Ingredients

     - 1 cup freekeh

     - 1 bunch asparagus
     - 1 roasted red pepper
     - 1/2 red onion, finely diced
     - 2 garlic cloves, mashed
     - 1 Tablespoon red wine vinegar
     - 2 Tablespoons balsamic vinegar
     - 2-3 Tablespoons extra virgin olive oil
     - salt and pepper


    Cook the freekeh according to the instructions on the package. When ready, add to a bowl. Steam the asparagus for about 4 minutes, rinse under cold water, cut into 2 inch pieces and add to freekeh. Cut the roasted red pepper (I used from the jar) into thin strips and add to salad together with the minced onion and mashed garlic. Make a dressing from the 2 types of vinegar, evoo, salt and pepper and add to the salad. Toss gently. I love freekeh and its nutty flavor but it can easily be replaced with quinoa in this recipe, if that is more to your liking.
