Cucumber - hemp tabouleh


   This is a variation of the classic tabouleh (otherwise known as my favourite salad ever!), practically I've added cucumber and replaced the burgol with hemp. 

  Ingredients (serves 6)

- 1 bunch parsley, finely chopped
- 2 tomatoes, diced
- 1 red/white onion, minced
- 1 English cucumber/ 2-3 garden cucumbers, diced
- 1 lemon, its juice
- sea salt
- sumac (optional)
- mint
- 3 Tablespoons extra virgin olive oil
- 4 Tablespoon hemp hearts

  In a bowl, combine the parsley, tomatoes, onion, cucumber. Add the sea salt, sumac, mint, hemp hearts, lemon juice and evoo. Toss gently to combine and enjoy!
