Tofutziki

                                          
             


    This is a vegan alternative to tzatziki, a very light, nutritious and delicious alternative!

 Ingredients
 - 250 g silken tofu, drained
 - 2 garlic cloves, mashed
 - 2-3 Tablespoons freshly squeezed lemon juice
 - 1 Tablespoon extra virgin olive oil
 - sea salt
 - a few parsley sprigs, chopped
 - 1 small cucumber/1/4 English cucumber

     In a food processor/blender, place the tofu, garlic, lemon juice, salt and blend until smooth. Add the olive oil, parsley and blend again. Taste and adjust the seasonings. Separately, finely grate the cucumber then squeeze out all of its water. In a bowl, combine the tofu mixture with the cucumber. Serve with crudités or with Ralu's special fries!




Finely grate the cucumber.

Squeeze the water out of the cucumber and add the pulp to the tofu mixture.
