Banana oatmeal cookies



      These cookies make a wonderful afternoon snack or you could enjoy them for breakfast, with a smoothie! I used all-purpose flour to bake them but you could use gluten-free flour, whole wheat pastry flour or spelt flour.

Ingredients (makes about 18 cookies)

- 1 banana
- 1/2 cup walnuts
- 1/2 cup almonds
- 1 cup rolled oats
- 1 cup flour
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon sea salt
- 1/2 cup maple syrup
- 2 Tablespoons vegetable oil (canola)

   Place the walnuts, almonds and oats in a food processor and pulse until you obtain a coarse mixture. Transfer it to a bowl, add the flour, salt, cinnamon and nutmeg and mix well. In a separate bowl, mash the banana with a fork, add in the maple syrup and the oil. Add the wet ingredients to the dry ones and, with a spatula/ wooden spoon, mix well. Spray a baking sheet with oil and, using an ice cream scoop or a spoon, scoop the dough onto the sheet. Bake at 350 F for 15-20 minutes, until the bottom of the cookies takes a golden color.
