Summer salad with maple balsamic reduction



Ingredients (serves 4-6)

- 3 tomatoes, diced
- 1/2 English cucumber/ 1-2 garden cucumbers, diced
- 1 cup corn (fresh of frozen), boiled and drained
- 1 red onion, thinly sliced
- a few parsley sprigs, chopped
- 1 clove garlic, mashed
- salt and pepper
- 3 Tablespoons maple-balsamic reduction (recipe here)

 In a large bowl combine the tomatoes, cucumber, corn, onion, mashed garlic, parsley, add salt, pepper and maple-balsamic reduction. Enjoy your summer!
