Fava bean and quinoa salad

                         



   Perfect for the warm season, this salad is hearty and refreshing at the same time, perfect to take to a picnic or barbecue.
  
 Ingredients (serves 4)

 - 1/2 cup quinoa

 - 1 can fava beans (or any other beans), drained and rinsed
 - 1 red onion, minced
 - 2 tomatoes, diced
 - 2 garlic cloves, mashed
 - 1 lemon (its juice and pulp)
 - 3 Tablespoons extra virgin olive oil
 - 3 Tablespoons fresh mint, chopped/1 teaspoon dry mint
 - sumac (optional)
 - sea salt

     Boil the quinoa according to instructions on the packaging. Let cool and place in a bowl. Add the beans, onion, tomatoes, garlic, mint, sumac (if using), sea salt, lemon juice and pulp and evoo and toss to combine. Serve with olives.
