Quinoa and tomato salad

                    
           



       Ingredients

      - 1/2 cup quinoa

      - 3 tomatoes, diced
      - 1/2 English cucumber/ 1 garden cucumber, diced
      - 1 small red onion, minced
      - 3 Tablespoons freshly pressed lemon juice
      - 1-2 Tablespoons balsamic vinegar
      - 2-3 Tablespoons extra virgin olive oil
      - 2 Tablespoons fresh mint/2 teaspoons dry mint
      - 1 teaspoon sumac (optional)
      - salt and pepper


       Boil the quinoa according to the instructions on the packaging, let cool. Add the chopped veggies and make a dressing with the lemon juice, balsamic vinegar, evoo, salt and pepper. Add the mint and sumac, if using, and pour the dressing over the salad, toss gently and serve. You could add crumbled feta cheese, if you like.
