Tomato and hemp hearts salad





       This is a very simple salad created by layering slices of tomatoes sprinkled with hemp hearts. I used different color tomatoes but red tomatoes will get you the same beautiful result.
       
       Ingredients

     -1 yellow, 1 orange, 1 red tomato (or just red)

     - hemp hearts
     - salt and pepper
     - extra virgin olive oil
     - 1/4 cup maple syrup
     - 1 cup balsamic vinegar

    Start by preparing the balsamic reduction: in a saucepan, combine the maple syrup with the balsamic vinegar and boil on medium heat for about 15 minutes, or until it has reduced to a thicker consistency. Let cool. You will not need all of the reduction for this recipe, store what is left in the fridge and use it in salads.
   Slice the tomatoes into rounds and place your biggest slice on the serving plate. Sprinkle the tomato slice with some hemp hearts and then place another tomato round on top. Repeat until desired height. Add sea salt and freshly ground pepper, a drizzle of evoo and a few drops of the maple-balsamic reduction. Serve immediately.
