Sugar snap peas and quinoa





        This recipe makes a perfect weeknight dinner: light, nutritious and ready in 20 minutes! 

         Ingredients

        - 1 cup quinoa

        - 2 cups vegetable broth/water
        - 2 cups sugar snap peas
        - 3 garlic cloves, smashed and finely minced
        - 2-3 Tablespoons sesame seeds
        - toasted sesame oil
        - salt and pepper

    Boil the quinoa following the instructions on the packaging. Meanwhile, trim the ends of the snap peas and remove any threads. Heat 2 Tablespoons sesame oil in a non-stick pan and sauté the snap peas 3-4 minutes, stirring often. Add the garlic and sauté about 30 seconds more, until the garlic releases its flavor.  Remove pan from heat, add salt and pepper. Lightly toast the sesame seeds in a pan.  On a platter (or a bowl), arrange the quinoa, place the sugar snap peas on top and sprinkle with the toasted sesame seeds.
